Excuse the horrible phone picture, and the fact that I cut them before the chocolate chips cooled completely... Lol. Im impatient and wanted to dig in!
These are delicious! I can't remember where I found this recipe but I'm sure glad I did! Now I'll pass it on to y'all.
You're welcome ;-) haha
This makes a ton! I made a 13x9 pan and a 5.5x9 pan with this recipe!
6 eggs
1.5 cup oil (I used veg oil)
3 cups sugar
1.5 tsp vanilla
29 oz can pumpkin
3 1/4 cup flour
1.5 tsp baking soda (I used baking powder since I was out of soda)
1 tbs cinnamon
1.5 tsp salt
Chocolate chips
I also added some ground all spice as well
Preheat oven to 350 degrees
Mix egg, oil, sugar, vanilla and pumpkin (use a very large mixing bowl, it makes a ton of batter) Fold in dry ingredients. Pour into greased pan, sprinkle with chocolate chips. Bake 40 mins, until toothpick comes out clean.
I had to bake the 13x9 pan a few extra mins (4 mins) and the 5.5x9 about 8 extra mins since it was so deep. Start at 40 and add a few mins at a time if it's not cooked through yet

I just made a pumpkin roll and have tons of pumpkin left. So I'm using this recipe to use up the rest. Taking your word that it's delish! :D
Can you make this w/ fresh pumpkin puree? Going to cook a pumpkin & would love to use it.
